You could, if there was a degree in folklore. In the colleges/universities I know there are no majors in folklore but English lit. What job would you want to have after you do this, if you could ? The reason for college is to get a degree and a profession to earn a living from the degree. A job with these degrees would be very slim in job openings.

Anthropology- study of humans. (culture, past, present, evolution of~). There could be several ways to interpret how anthropology is related to education. I think you could study the culture of a classroom, in order to best determine what would fit the needs of the teacher and students. Or if you're referring to teaching anthropology- anthropology is a major. So that's related to education because people study it?
The university of Tennessee at Knoxville has a really great program that specializes in forensic anthropology but it might be difficult to find a lot of colleges because you can't really major in forensic anthropology. Most forensic anthropologists major in biological anthropology (also called sometimes, physical anthropology)
