Assuming (probably incorrectly) that you are talking about car engines:
It probably depends on the engine, and I question why you would ever want to rotate an engine in the opposite direction from how it is designed to run. But if I wanted to move an engine in the wrong direction, I would put a socket wrench on the front of the crankshaft, generally in the middle of the engine's lower pulley. I would first disconnect the negative battery cable, as you never want to risk the engine starting to fire and move on its own when you are working on it.
These generic hints would work on most traditional front engine rear wheel drive american car engines of the 50's thru 70's and beyond. (also on some Volvos, Suzuki Samurais, MBZ, and BMWs I have worked on.)
