Hm, If you downloaded the newest version and had the old one it just added onto the old one. You cannot uninstall the earlier one because it's all together.

Do you mean your Java installation keeps updating itself? If this is the case, then you have two options:Turn off auto-updates for Java and just stick with the version you're using now.Whenever you see a new version has been installed, uninstall the old versions. (If you have a more recent version, there is little chance of you needing an outdated version, as well).
First of all, it's "JDK", not "jdk", and "Java", not "java". What do you mean by "Java new edition"? I do not find that term when I Google for it. "Java 2 SE" is a brand name for very old, obsolete versions of Java, between version 1.2 and 1.4, inclusive. The current version of "Java SE" (Java Standard Edition), as it is now called, is version 7, with support still available for version 6. These versions are also called 1.7 and 1.6, respectively. See <http://www.oracle.com/technetwork/java/javase/jdk7-naming-418744.html>

They are different versions. Java 5 is newer than Java 2. Think of it like the difference between the Playstation 1 and the Playstation 3.
newest version is needed
It is not possible to uninstall JavaScript, because it is an integral part of each web browser you have. It is only possible to disable it, and in that case you can enable it again later. If this question was actually about Java, the answer is again yes - if you uninstall it you can reinstall it again later.

You only need one version of the JRE to run a Java application.
I believe the only way to "turn off" Java would be to uninstall it. If you are using Windows you will need to go to Add/Remove Programs or if using a Mac you will need to find Java in Applications and move to the trash.
