Remove the counter.

Counters are usually installed with just a few screws, and the arborite is easy to get out. You'll likely have to re-caulk the edges, but that's going to be a LOT easier than trying to remove parts of the hardwood floor.

If the countertops are granite, hire a contractor. The stone is very heavy and is likely to break when you lift it out.
