How does the water purification systems work?

Depending on what kind you get some of them work different. If you get a whole house filter than its gonna be a basic carbon & sediment filtration. If your on city water than that should be the best choice. Though if you want max filtration and if your water is very hard for example: water spots on dishes, on the shower then you might need a water softener which will eliminate that effect.

One is a physical where it passes through a filtering medium like charcoal, another is chemical where chemicals are used to separate bonds from the molecules and contaminants and lastly, biological where it uses microorganisms.
