You cant really "control" a paper airplane. Once it's out of your hand, it's on its own. If you fold the typical Delta wing paper airplane, you can modify its flight behavior to some degree by slightly bending its "rudder" (the vertical part in back) and its "elevator" (the horizontal part in back). With differential bending of the "elevators" (one side up, one side down) you might be able to get your plane to do rolls. Another modification you might try is adding a small bit of weight like a dime somewhere around the middle or just aft of the middle. (Don't put it too far back or it will stall.)
