The Official Scrabble Dictionary allows both caroler and caroller. Similar words with the same vowel consonant pattern like bevel, jewel, label, level, libel, model, ravel, revel and yodel, all were spelled both ways. That is with a single and a double L. In the dictionary the double L is more commonly used by the British, while the US standard is more often with a single L. However, both are allowed and seem interchangeable. If you go by what we see in print and take the word model as an example, you would most often see modeling not modelling. Thus, I think a modeler and caroler rather than modeller and caroller would be the more correct US way of spelling with this particular consonant, vowel, consonant, vowel, consonant format.
