Both the spelling grandad and the spelling granddad are variants in the dictionary. Many people will use grandad, dropping the doubled D.

(Note that while grampa does not use a D, the spelling grandpa should.)

The slang term grandaddy (from grandfather) is often used to indicate something large in stature or repute, as if grown with great age, e.g. the grandaddy of all speckled trout, and metaphorically the grandaddy of all muscle cars.

the same way you have it... "grandmother", or alternatively "grand-mother". It cannot be written as "grand mother", though, because this could mean a mother that is grand or large.
