The COMPOSITION
-First we should make sure our handwriting is at least legible.
-Now that that is done, do some planning on a separate piece of paper or the question paper. It is better to write down your thoughts.
-Then write down some good words and phrases that you think will be useful.
All that will take around 10 minutes and after that you just have to structure your idea within 30 minutes.
As for emails or something like that it really depends on the question but it is good to also plan before doing it. Don't forget about the introduction and ending.

A good composition should have an introduction (one paragraph), a body (depends on what kind of composition you're doing...minimum is 1 paragraph), and a conclusion (one paragraph). When I write a composition, it usually comes out to 3 pages, double spaced. Bottom line, it depends on what type of composition you are writing.
