If I'm not mistaking it was in Sumerian originally but some event happened and the Sumerians disappeared and the church was forgotten. A person in recent times came to dream about this book and hence was rewritten. I'm not sure which language but if I'm not mistaking "The Mad Arab" was the one who rewrote it, he knew like 5 different languages and therefore I cannot say which language it was in but I'm betting it was either Arabic, German, or English. The spells however, are still written in Sumerian language because the Sumerian words are linked to the magical meanings by the priests who originally created these spells. "Zi dingir Anna kanpa" is Sumerian meaning Spirit of the sky remember. Some parts of the spells don't matter what language you use for them but some like I said, are specifically linked to magical meanings and need to have the original language for them to work.
