The most obvious thing that comes to mind is slang and pronounciation. Instead of 'going to' you would say 'gonna' although I'm not sure whether that would come under accent/dialect. Right, I'll try to explain what I'm thinking in laymen's terms. There's standard English, which every region knows and develops their own little dialect, if you will, around it. Standard English is in the dictionary, it's used in most novels. If you were to write a letter to someone of great importance you wouldn't use words such as 'cause' (the abbrevation of 'because') but if you were writing to a friend, you would.
