It matters on what you are doing. If you are riding, it might mean the horse is paying attention to you. Sometimes when your not riding and are doing something the horse puts its ears back when it is scared or angry.

The way to get a horse used to hacking out ( or in America-trail riding) is by doing it day in day out. The horse learns to accept things by doing them over and over and OVER again esp. a young horse. A horse learns best through repetition.
The breed does not have much to do with whether a horse will like doing things, but the build of their body will determine if they are capable of doing it at higher levels. This may translate into whether a horse likes doing things. If it is too hard on the horse to do something, they probably wont like it.

I believe you mean MOUNTING a horse. Mounting a horse means to get on, you will end up sitting on the horse's back.
