ive never heard the term a bouquet of pheasants, but presumably its the same as a brace? the usual way in which pheasants are sold (in the uk at least), as a pair, usually a cock and a hen. due to the fact that the meat of the male and female differs slightly in texture and taste.

i cant say for sure, but if somebody asked me for a bouquet of pheasant, id probably give them a brace.
