Collective nouns are used to group two or more people or things in a descriptive way. The singular noun 'Norman' is not a group.

However, if there are two or more 'Normans', a collective noun can be used. Since collective nouns are an informal part of language, any noun that suits the circumstances can function as a collective noun; for example, a pair of Normans, a duo of Normans, a trio of Normans, etc. Or, if you are speaking of France a thousand years ago, a horde of Normans.
