I checked my Merriam Webster and they're not really sure, but butch probably comes from the male nickname and appears to have originated about 1941.

It denotes notably/deliberately masculine appearance and/or manners.

A Butch haircut is closely cropped hair.

Originally from a Latin word 'barba' meaning beard. It passed into English from the French language from the term Barbiour. In later years it also referred to practitioners of surgery and dentistry but was restricted by Henry Vlll to hair dressing and dentistry only
