An egg is essentially a pod for growing a baby bird until it can survive on its own, much like a womb is for us humans. Anymore, we think of the egg as containing a yolk, not the actual bird, but it was probably the other way around in Shakespeare's day. The yolk is basically the only thing in the egg, except the white which pads it. So Mercutio is saying that Benvolio's head only has quarrels in it, to the same effect as his previous statements in the same paragraph.


I think it's a jab at "half baked" ideas and quarrels of no substance that, by themselves, can never mature to an meaningful resolution; as seen in the way M. chastises B. for arguing about waking sleeping dogs on a public street. The argument seemed to M. to be a complete waste of time and a sign of immaturity on B's part.
