In my opinion the Jewish citizens resisted the truth because it was more comfortable. They deluded themselves because how could someone choose to believe that there are those in the world that could do something like that? Especially if you consider ther faith- it really is just too horrifying to imagine.
In the book their self deception really is one more things the Germans could take advantage of. They had countless opportunities to try to escape, to attempt something (Moishe the Beadle, the Hunarian police friend, their maid) but each time they chose to live in their delusion.
So in recap- the Jews resisted the truth because it was too horrifying to believe people could do this to eachother, especially to a faithful person, and it was comforting to delude themselves.
