Eastern riding uses thinner saddles designed for jumps and dressage, these saddles give a better feel of the horse and a rider uses two hands to control the horse. Western riding is meant for ranch work, long hours in the saddle, and uses thicker saddles designed for comfort and the horses are trained to be controlled with one hand on the reigns.

I'm pretty sure that Barrel Saddles have a deeper seat and higher cantle to help the rider stay in the saddle. Western Pleasure Saddles are just everyday plain western riding saddles. I'm not 100% sure about all this, but I'm at least 80% sure.
