probably because people thought it was an easier word to say. I'm not quite shure where the name "tack" came from but here are some senarios that it's better to use up it.

"he tacks up nice" instead of "he is very good when you're putting on the saddle and bridle"

"aah, i need to get Toby some new tack, his old stuff isn't doing very well" instead of "aah, i need to get Toby a new saddle and bridle, his old stuff isn't doing very well"

it also sounds better, too.
