Just find sam1174 on YouTube (xk8 instrument cluster bulb replacement) - he has videos of removal of centre panel and instrument cluster area. The passenger side comes off much the same way revealing two bolts that hold the bag (and stop it hitting you in the face ;).
Briefly : (driver side) raise the steering wheel and undo the bolts on the lower bolster (x2). Remover the bolster, disconnecting the valet and temp sensor switches as you go (x2). Lower the wheel and disconnect battery (neg. terminal), remove 2 lower screws, then pull out and down to remove the wood trim.
Centre section: use a trim remover to lever out the bottom edge, the raise the whole section slightly and pull out at the top - should be held at an angle as the tabs at the top are angled upwards into the dash top.
Air ducts at the sides are just pulled off.
