You need VAGCOM software to do so.
The sensible way would be by having it serviced.

Unfortunately you will have to take it to the garage to be reset. As far as I am aware there is no simple method, like turning the ignition on and off whilst holding the odometer button, as on previous models off the V70.

To reset the service light in a 2008 Seat Alhambra diesel, turn the ignition key to the "on" position without starting the engine. Press the gas pedal three times within 10 seconds. Then, turn the ignition off and back on to check if the service light has been reset. If it remains on, repeat the process.
