my 1992 Jetta has 194k and is still running just fine....I regurarly change the fluids. I use High Mileage oil and nothing but Bosch parts. Its had its share of problems like suspension and tranny problems but nothing too major.
Jetta's will go for around 250k-300k. VW Golf 2.0's will run for about 450k-550k miles. The golfs also get a solid 45mpg
I have a friend (who is a VW mechanic) who has a 1996 Jetta GLS with a 2.0L engine. It has nearly 300k miles on it and it still has lots of power (relatively speaking of course) and runs smooth. The engines are great. Of course, you will have to replace/repair other stuff over time.
There is no such thing as normal. The use of 1 qt every 2,000 miles is not excessive. Depends on how the car is driven, maintained, and miles on the vehicle. Jettas use a lot of oil compared to other cars.
depends it can be anywhere from a couple hundred dollars used to 17,000 or more. there is a really excellent jetta called the tdi jetta they run arouind 20,000 but last until 400,000 miles on the motor or more and they get about 40 miles to the gallon

No matter how well maintained the more miles on any engine the more likely it is to start having issues.
If your 2001 VW Jetta is an 4-cylinder automatic, you will get 22 combined mpg. If your jetta is a 4-cylinder manual, you'll get better mpg, that being 24 combined.
That's VERY low miles but if NOT properly maintained could be worse in the long run then a car with a 168k miles that was properly maintained but if it was maintained well you have yourself a VERY nice,reliable smooth car with LOTS of power and Class
