Your flexible brake hose is collapsed inside. When you apply the brakes, the pressure gets through, but the collapsed portion of the hose won't let the pressure back out and it locks up the caliper. Depending on how bad the hose is collapsed inside, the pressure may release after sitting for a while. The hose may look good on the outside, but that is just a protective barrier for the inside hose. Replacing the hose should solve your problem.
