There are two very famous witches in Greek Mythology - Circe, who lived in the island of Aeaea and turned men to beasts in the Odyssey, and Medea, the princess of Colchis who helped Jason and the Argonauts procure the Golden Fleece.

Undoubtedly, the most famous witch in literature of all time is Morgan LeFay. There are of course other magical beings in the Arthurian legends - the Lady of the Lake and Queen Mab of the Faeries, to name a few, but they were not quite considered witches, that is, if you define a witch as a mortal who practices sorcery, and not one who was born in the realm of magic and are naturally magical, such as those two mentioned above.
