How do vampires eat blood?

1. They first have to obtain some proximity to their victim. For some this means a kissing embrace (as for the incubus and succubus), others have effected their feeding through two stories from under six feet of dirt (see the Shunned House by Edgar Allan Poe)
2. Some go through the motions of opening their mouths to receive the stolen life-force. This is not necessary and maybe just be a reflexive reaction from more human times. Others merely open wide their eyes, or flare their nostrils, or make inviting gestures with hands and arms.
3. They must establish some sort of rapport with their victims, a psychic link so to speak. How this is done is poorly understood but the effect of it makes for some interesting and disturbing mental effects on both vampire and victim.
4. After feeding the vampire seems to go into some sort of ecstasy that leave it incapacitated and vulnerable for a time.

If you want another opinion take it from a real psi vampire

Most vampire feed unconsciously and don't even know that they are vampires. Others reach out to their "vamp ism' and can control their feeding by directing "tubes" from there natural energy source and connecting to a donor's.

Other vampires can feed off environmental energy, emotional energy or sexual energy.
