There are 1001 nights, but the stories spread over several nights, sometimes even months. Scheherazade is trying to keep the sultan interested, so as not to be executed the day after, so every tale has to last more than one night. She has to be certain she won't be beheaded in the morning.
Moreover, sometimes there are stories within a story, which makes it even more difficult to keep a precise count. Finally, depending if you are reading the Syrian or the Egyptian version, you get a very different number of tales...
The only thing we can be sure of is that 30 Persian tales were originally found, then extra tales were added to the list - different tales, depending on the version of the text we are talking about.)
