Jem tore up white white camellias
Jem took Scout's baton and chopped the tops of all Mrs. Dubose's camellia bushes. Then he snapped Scout's baton in half.
Jem knocks the heads off Mrs. Dubose's CAMELLIAS, NOT azaleas. (It is instead Miss Maudie who nurtures azaleas in her garden.). This happens in Chapter 11, page 114 (may vary depending on your particular book).
Jem is upset with Mrs. Dubose's racist comments towards his father, so he retaliates by destroying her flowers as an act of rebellion. Jem is trying to stand up for his family and assert his own sense of justice in response to Mrs. Dubose's bigotry.

When Jem looks up to Atticus and knows that he is a gentleman, and finds out that Atticus is very good at shooting birds. That is one of Atticus's talents, so then Jem sees what kind of a gentleman Atticus really is.
Jem beats Mrs. Dubose's camellias in anger after she provokes him and insults Atticus, calling him awful names. He is frustrated by her mean remarks and stands up for his father by destroying her flowers. Jem's action signifies his struggle with his emotions and his loyalty to his family.

His pants. But he comes back and discovers them folded and sewn up (Boo Radley did that) and it kind of makes jem realize that Boo is not a bad person.
Jem has to go to Mrs Dubose's house and read to her every night. The reading sessions end with an alarm going off (later and later each session) and Mrs. Dubose having a fit.
