To catch fish, and other small yummy (to herons) animals. I see Herons around my pond a lot. They will spear the fish with their sharp bill and then flip it up in the air and catch it in their mouth and begin swallowing similar to a snake swallowing. You can see the fish body shape going down their throat as their neck bulges out. Pretty weird but very interesting.
