It depends on what you want to teach your betta. I taught mine to jump for food, and I'm teaching him to swim through a hoop. If he's food motivated, it should be easy. This is how I'm teaching my boy to swim through a hoop:
1. Put the hoop in the water (make sure it floats or you have it attched to something so it doesn't sink)
2. when your betta is on one side of the hoop, dangle some food like bloodworms (or pellets) on the other side. Make sure he sees the food.
3. Most likely he will swim through to get the food. Them let him eat the food.
If you repeat these steps, he'll soon learn that swimming through the hoop is rewarded. Therefore whenever you put the hoop in the water, he'll swim through it.
*Keep in mind you cannot force your fish to do anything, and if he doesn't learn the trick, don't be mad at him*

You can place a mirror in front of it and it will fight as though it was another betta. However if you keep the mirror in for too long your betta will get stressed out and die, so best not to do that.
A Betta will learn to recognise the person who feeds it and come towards that person. It will also learn to hide from people who shock it and do nasty things like bashing the fishes container. Bettas are not performers of tricks. If you want something to do that then get a dog.
