Ingredients

  • 1 lb Halibut, cut into chunks
  • 1 c Flour
  • 1 1/2 ts Garlic powder
  • 1 1/2 ts Curry powder
  • (or a bit less) 1 ts Marjoram
  • 2 ts Baking powder
  • 3/4 ts Lemon pepper
  • 2 c Panko
  • (Japanese potato flakes) 12 fl Flat beer (or less)

Combine flour, garlic powder, curry powder, marjoram, baking powder, and lemon pepper. Mix well. Slowly add enough flat beer to make a thick batter. Dip halibut in batter and then roll in Panko. Let stand for 2 minutes. Deep fry in 375 degree F. fat until golden brown. Drain on absorbent paper and serve with a tartar sauce or a zesty tomato, horseradish sauce for dipping. Serves 3-4.
