I have a book called Proffesional Cooking by Wayne Gisslen. It explains everything about most aspects of cooking all the way from sauses to baking. It helped me through my apprenticeship and eventually the information in that book made me chef. It covers the basics to advanced cooking techniques.

All tho i think you are right by saying that. The Betty Crooker cook book will always stay in my kitchen. Some cook books have recipes that only are found in that cook book. I will still buy cook books. Hope this helps and good luck cooking.
