It's very simply.. tartar sauce, with mustard and ketchup. I love the sauce and when I decide to indulge and have a Big Mac. I always order it with extra sauce. My theory is this: why was this sauce created? To save time.. This is a "fast food" restaurant and making things faster is good for business. In order to save time assembling a burger, why not combine the ingredients into a "special sauce" therefore eliminating the ketchup, mustard, mayo and relish applied separately instead mix it all together and make one simple squirt of the sauce. I think that it was further simplified by using tartar sauce instead of mayo and relish. If you read the ingredients of the Mac sauce, and then read Tartar sauce, mustard and ketchup, there is only one difference between the Mac sauce and the other three, and that is the tomato. There is no tomato in Mac sauce, but I assume that this was taken out of the sauce at some point and substituted with coloring. But give it a shot.. try it at home.. I think you'll agree with the right combination of the three it will taste pretty close and its also very easy to make. Trust him, trust him, he's really right!

I do not think you can add anything into a sauce to stop it burning.You must cook in a heavy pan and stir all the time with a wooden spoon. If you over season a sauce with salt you can add raw potatoes which will take away some of the salt.
Tartar is a stubborn substance that remains even after most dental cleanings. Periogen progressively dissolves tartar when fresh solution is applied daily for a period of time depending on age and thickness of tartar formations. A single application will not dissolve tartar. Original Respondent Comment: I scraped a little tarter off my teeth and put it in a small solution of water and periogen. None of the tartar dissolved at all. I would say it does not work.
It is better to simmer with the lid off. The purpose of simmering the sauce is to reduce it, or to boil some of the water out of it so that the flavors in the remaining sauce are more concentrated. If you leave the lid on, then droplets of water will form on the underside of the lid and will fall back into your sauce, defeating the purpose of simmering for a long time.
