Yes, they are edible but the kinds that come in kits will sometimes be fed on detritus in the kit which isn't edible because it contains all kinds of unpleasant things like diatomaceous earth. However if you don't feed them from the kit they are just as edible as a normal shrimp. I'm not saying they will taste good but they are safe to eat.
