Opinions are divided on this, certainly MANY recipes require the use of raw egg yolks, but if the chickens producing the eggs are infected with salmonella, it has been found that this bacteria can also be present in the body of the eggs that that chicken produces leading to food poisoning.

The consensus is that provided that you are fit and healthy and the eggs are fresh (and preferably free range produced) it is OK to eat them raw, but if you are a baby, sick, pregnant or elderly & frail then perhaps you should avoid them
