Betta's are carnivores (meat eaters).
Some readily take pellets, and some are fussy eaters, and may never eat pellets.
Try blood worms or brine shrimp if you are worried it's not eating.
Alternative is to take it back to the fish store and ask for one that is eating.

One Reason for that is that they are not spitting out food but rocks, this is because most aquarium fish like gold fish can't chew so they pick up rocks in there mouth and they use them to mash up food so they can eat it more easily and then they spit out the rocks
