Can an iced cake be sliced and frozen?

Yes you can, it is a tradition for the bride and groom to keep and freeze the top tier of their cake and eat it on their first anniversary, however by then the cake usually has been freezer burned. You can keep an iced cake safely frozen for about 10-15 days.

Yes, there are very few cakes decorated or not that cannot be frozen, if it is leftover cake, then cut into pieces, separate with non stick parchment, put in a box and freeze.

The directions I give my clients when I make their wedding cakes:

All cakes should be wrapped very well to seal out air before freezing, even if they are in a box. It is notrecommended to slice the cake first, unless you want to defrost and eat only one piece at a time, because that can result in more air exposure, thus freezer burn.

The best way to freeze a decorated cake (or any iced cake) is to place it in the freezer just long enough for the icing to become hard, about 30-45 minutes. Then take it out and immediately wrap it in several layers of plastic wrap, being sure to seal out all air. Since the icing is already hard and won't stick to the plastic, you can gently run your hands around the top and sides of the cake to remove any air pockets.

After wrapping very well in several layers of plastic wrap, wrap in aluminum foil, then place in a cake box to prevent it from being crushed by other items in the freezer.

In general, most cakes should be eaten within 3 months, with the exception of the top layer of wedding cakes that are preserved for the couple to have on their first anniversary.

To thaw the cakes, leave the wrapping on so the condensation that forms while defrosting will form on the wrapping and not the cake.

Yes. I followed a suggestion to wrap it in plastic wrap first and then in a heavy foil and then it was ready for the freezer. When I thawed it out - it tasted just as fresh as it did before it went into the freezer!
