Hermit crabs are scavengers and can eat a wide variety of foods. Spinach is among them, and is actually a very good source of iron, calcium and keratin for the crab.
If you feed your crabs spinach, it is best that it is organic. Pesticides can be very toxic to hermit crabs, and as a result the pesticide residue on our foods can build up and cause sickness or even death over time.
For more info on feeding your crab natural foods (*commercial foods tend to contain preservatives such as copper sulfate and ethoxyquin, both toxins to hermit crabs):
*You may wonder why, if copper sulfate and ethoxyquin are toxic to hermit crabs, are they allowed to be sold in food created for them. Unfortunately, pet food is not strictly regulated. Someone would have to spend the money and time to conduct a scientific study that proves beyond the shadow of a doubt that these chemicals are toxic (ethoxyquin is not allowed to be used for humans because of it's danger, and recently there has been concern about neural damage in cats and dogs due to the ethoxyquin in dog foods). That takes a lot of money and time, so it has not been done. It is up to those in the hermit crab lovers community to spread the word about observances that have been made. Much has been learned in just the past year. Do not rely on websites older than 12 months.

They eat fruits, like apple, grape, strawberry, pineapple, and coconut. (These are some examples). They can also eat some types of meat, and they eat these because Hermit Crabs live near the ocean, Unless you are talking about Marine Hermit Crabs (hermit crabs that are underwater). Hope this helps.
