yes they are very simple to build i have one i built myself just out of plain pine lumber and some light bulbs and a fan
If you ever watch the show Good Eats, Alton Brown makes one with a box fan and drying trays. Light bulbs are fine too, though it's not as efficient or accurate as using a commercial dehydrator with a timer and adjustable thermostat.
DIY Solar Plans
It's also easy to build a solar-powered food dehydrator. The simplest plan calls for 2 cardboard boxes, tape, and black plastic garbage bag (and of course, sunlight). See below article for a list of DIY plans:
It might be a little bit of a task to build your own homemade food dehydrator, but, you can learn how to make a solar powered one from a website called Mother Earth News.

The best way to use a dehydrator with parchment paper for food preservation is to cut the parchment paper to fit the dehydrator trays, place the food on the parchment paper in a single layer, and then dehydrate the food according to the dehydrator's instructions. The parchment paper helps prevent sticking and makes it easier to remove the dried food.

Its quite easy to build your own dehydrator, especially if you just want to make jerky. Its as simple as making a fire, then a rack to hang your meats over the top. Dehydrating fruits requires a little more finesse, but the reality is that if your oven temp goes low enough, you can just use that.
