Yes! My husband just ate noodles from an instant noodle pack, with seasoning, and omitted to check the use by date. 4 years out of date! They DID smell strange, I thought, but he said he added soy sauce and lime juice, so maybe that was the reason for the odd smell.

However, a couple of hours later, he felt nauseous and then started having spasms and diarrhoea.

So, yes, definitely, noodles go rancid.

I'm not to sure that they ever truly become in-edible. I just ate a package and the best by date was three years ago, I feel fine. The noodles might go stale, but that goes away when you boil them, and the flavoring is so full of salt that it should last for years and years.

Noodles packets are not always 100% air tight. That means with time there is absorption of watervapour from air (specially hygroscopic items like some salts-KCl, sugars). Where there is dampness there in growth of fungus. So the expiry is based on factors as porosity of pacakging, hygroscopic nature of enclosed material etc..

If u find the tastemaker powder is not free flowing (upon accumulation of vapour for a long time) it is near expiry.

Uncooked noodles do not usually go bad unless incorrectly stored, for example, in damp or humid conditions; egg noodles are more eat risk of contamination.
