Without a doubt - they also have different levels of starchiness. Starchier/granier potatoes like russet are great for soups and baked potatoes. Waxier potatoes like Yukon gold are better for boiling, stews and salads.

This isn't going to be the main course of any dinner, but if you're going to eat straight boudin, then the best thing to marry with it is whole cooked russet potatoes. Boil them with the skins on to maintain texture. Make sure you season the water and once they are done boiling, you season the potatoes in the strainer. I use Old Bay Seasoning when I do it.
