When you rub sage either fresh or dried, it brings out the oils and aroma of sage. Sage's oils and aroma is very fragile and does not last long. It is better to buy more sage when the previous sage is starting to age. Freah is always better than dried The flavor from sage does not spread very well but yet it is a strong aroma. Mix it well. I have sage growing in my backyard so fresh is available and it has very pretty purple flowers.

There is fresh sage and that means that the leaves are not dried yet and then you also have dried sage. You get rubbed sage when you rub it. This brings out fresh oils and aroma. We have sage growing in the garden. Nice aroma and pretty purple flowers. Fresh sage is three times as strong as dried sage, just like any other herb. The oils and aroma are very fragile and does not last long in a jar, so I do not buy rubbed sage. Because of the fraility of sage, make sure what you use is still aromatic when you rub a leaf. When I do have to purchase sage, I buy the smallest amount that is practical, not necessarily the most expensive. But then if you purchase very cheap sage, well you get what you pay for. Be selective and alert when you buy sage. When you buy it you will see. Very much worth buying
