There is no reason specific reason, but the Chinese food you see in America and many other different countries is considered "Americanized". Real Chinese food isn't the same as you may see in stores and restaurants, in fact there is vey little meat in a typical Chinese dish in comparison to the amount of rice and vegetables, it's pretty much the opposite in Westernized countries.

Milk is usually drank separately rather than in the dish itsel, if at all.

Genetically speaking, Many people lose the ability to digest milk after a certain age (usually as a teen or young adult). The body stops producing lactase- an enzyme that digests lactose- the sugar found in milk. This is very common among native Chinese people ans so milk has naturally become sapringly used in that culture.
