Pies can take a long time to bake, but to shorten this time, you can pre cook the filling in a pot or microwave and the bottom part of the pastry case can be baked blind in the oven (see related questions). If the filling is then added hot to the case and the top layer of pastry added, the pie only needs to be cooked for long enough to cook the top, which if it is pastry, nmay be about 10 minutes.

Another way to cook pies quickly is to make a lot of little pies that will heat through quickly, but this takes a little more time because of the hand labour involved.

However, when planning to chill or freeze a pie, brush egg white over the bottom crust and bake for 10 minutes before adding a juicy filling.
