Kettle chips. Because they are baked, potato chips are fried.
between lays and kettle ill have to say kettle.
Kettle chips are practically the same as baked. The kettle chips are just thicker and cooked longer. In my opinion, they are either cooked in a kettle, or deep fried enough so that they can call them kettle cooked.
They are thinly sliced potatoes, that are then cooked in hot fat/oil , which makes them crisp. Being crispy they can easily crack or 'chip', hence the name. In the UK They are referred to as 'potato crisps' or just 'crisps'. NB 'Low Fat' Chips are cooked in vegetable oil, such as olive oil , or sun flower oil (NOT mineral oil). Compare to 'non- Low Fat' which are cooked in in dripping(Beef fat) or lard(Pig fat).
Mrs. Mike's Potato Chips are great tasting potato chips that are similar to Old Salty's or Mrs. Fisher's if you get them (Rockford, Illinois). Mrs. Mike's are made in Freeport, IL. I buy them in my grocery store in Rockford, Illinois http://www.mrsmikes.com/ On their site, they say "Mrs. Mike's makes old-fashioned, open-kettle style potato chips that are cooked in vegetable shortening with no cholesterol to provide a great potato taste. Other party/picnic items are also for sale at this factory retail store."

Utz is a quality snack company that was founded in 1921. They make a variety of potato chips, kettle chips, tortilla chips, pretzels and cheese curls.
Potato chips get stale when exposed to air because they absorb moisture from the air, which makes them lose their crispness. The oils in the chips also oxidize when exposed to air, causing them to become rancid and lose their flavor.
