There was a candy maker who wanted to spread the Gospel of the Bible with other people by a candy he would create. So, he used the pure white letter "j" (from Jesus) to represent that Christ is the pure Lamb of God. The large red stripe is for the blood of Jesus that was shed on the cross for our sins. And the mint flavor is similar to hyssop which was used for cleaning sacred buildings and is was also a medicinal plant. Because Christ was our "medicine" to "cure" our sins, the candy maker used peppermint.
