Blanching vegetables involves immersing them in boiling, usually salted, water for a short period of time, and then draining. Blanching is appropriate for vegetables that require very little cooking or could even be eaten raw: green beans, asparagus, etc.
For green vegetables, blanching is usually followed immediately by an ice bath; as rapid cooling is needed to stop cooking and preserve the green colour (which breaks down after about 7 minutes of cooking).

You can freeze leeks if you would like but it is not the best idea. This is because it will retain a lot of moisture just like most products do when they are in the freezer. As a result, your leeks will be more mushier than if not frozen. However, if you are going to use them in a liquid based product such as a soup, a smoothie or to make a sauce then go right ahead. If you decide to freeze your leeks the best thing to do is to cut them up in equal pieces and place them in an air tight container or air tight bag. If you would like, blanch your leeks for about 2-3 minutes, however you might loose some of the texture and flavour.
