The term "canning" is somewhat misleading, because it mostly uses traditional glass jars, not the ubiquitous metal containers called cans. Home canning (preserving) involves cooking and thereby sterilizing the foods. Then the products (mostly fruit and vegetables) are sealed within an airtight jar using flexible seals and screwed-on lids.
