1 Package 16 oz Fideo Pasta (Sold in the Ethnic isle)
4 Medium size tomatoes
3/4 cup of chopped onion
3 garlic cloves
1/4 cup of chicken bouillon
4 cups of water or chicken stock
4 tbs of vegetable oil
First step is to make the sauce for the fideo. Blend the tomatoes, 2 cloves of garlic and 1/4 of onion with two cups of water for a minute on medium speed and set it aside.
In a 4 quart pan turn the stove on medium temperature and pour the oil into the pan wait until the oil is hot and add 1/2 cup of the chopped onion. Cook the onion until translucent than add one garlic clove (chopped). Immediately add the fideo and start to brown it. Do not step away from the stove or stop stirring the fideo, since it will burn very easy. Once the fideo is browned add the sauce and the four cups of water. Let it come to a boil than add the 1/4 of chicken bouillon at this point cover the skillet and let it simmer for 15 minutes until the fideo is tender. If you do not want to make the tomato sauce, you may use one can of an 8 oz plain tomato sauce. You will need a total of 6 cups of water or chicken stock. You may serve the fideo with cheese or sour cream on the top and warm corn or flour tortillas on the side. On a side note, I like to add two raw eggs on the fideo right before it starts cooking for 15 minutes. The eggs cook and I have a meal with protein.

If you were able to find kosher cow tripe, you could make kosher menudo. (There is no issue with offal so long as it comes from a kosher animal). I have personally found my own "Menudo Curry" to be extremely cheap to make and even more rewarding to eat. Just don't forget the Coriander! (Do not share with the unappreciative, more for us!)
