Drain some juice off of the top first or your jar will burst, much like if you try to freeze a bottle of beer. When we freeze ours we remove them from the original jar, put them in a good plastic container with a tight fitting lid, add water to cover and freeze.

Sometimes, if frozen longer than a month or so, the eye of the oysters will become very tough. You can tell when eating out if their oysters are fresh or frozen by the tenderness or toughness of the eye of the oyster.
