However cows and bulls tend to have a stronger taste to their meat, so old steers (those that are older than 2 yrs of age) would also have a more stronger taste. But the stronger taste can also be attributed to their diet: grass-fed animals tend to have a more stronger leaner carcass than grain-fed animals.
